Easter Potato

Today, last year's potato crop became this year's seed potatoes.

Easter potato?

It's Easter today and this egg-shaped  potato from the basket marked "2012 harvest" is now about 4" underground and tucked under some hay. By June, we'll have "new" potatoes (the juicy, unfinished potatoes in the early part of the season). By late July, there'll be 10 or more lunkers ready for the oven or the roaster.
